Not only was Yamato the perfect teacher for Naruto and Sakura, but I believe Yamato would be the perfect teacher for Sasuke as well.
There are many reasons why Yamato is the perfect fit for Team 7: he really has a heart for the three kids on his team and he genuinely enjoyed getting to know them and having real friendships with his teammates. Unlike Kakashi, who hated being a teacher, Yamato thrived under the responsibility of being a team leader, a job he took seriously. And as the Tsukuyomi dream showed, it was Yamato's dream to be Team 7's captain.
Sasuke would have likely excelled under Yamato's tutelage, since Yamato was responsible, attentive, and caring, a teacher who was positive and upbeat about life but also attuned to the tragedies that life brings. Yamato would have been able to emotionally support the young Uchiha and guide him.
Yamato has emotional sensitivity to his team, making him able to sense the flaws and struggles of the members of Team 7, and he steps into that space to provide adult guidance.
Sakura struggles with low self-confidence and low self-esteem, so Yamato offers her encouragement by telling her that her feelings and contributions to the team are valued.
Naruto struggled with controlling his emotions as well as growing as a warrior, so Yamato held Naruto accountable by confronting Naruto with the truth of the teammate he'd unintentionally hurt and offered him a course of action to better himself as well as helping Naruto train.
Sasuke struggles with cooperation and with communication, so Yamato gently lectures Sasuke to learn to cooperate, communicate, and work with others, reminding Sasuke that he isn't in the fight to protect Konoha alone but that there are others who want to help him if only Sasuke will learn to ask for it.
In the Book of Sunrise arc when Sasuke seeks Orochimaru for information and runs into Captain Yamato guarding the hideout, Yamato wants to know Sasuke's reasons for such a visit, since by village's orders, not just anyone can visit Orochimaru anytime.
Sasuke reveals his intention is to investigate the recent exploding humans attack on Konoha, and Yamato asks if Sasuke has updated the Hokage on his mission's progress, to which Sasuke responds that he has not.
Yamato's response to this is to note that things would be a lot easier if Sasuke would coordinate with the village and the ninja of Konoha by communicating with them.
Though because Sasuke's actions are for the benefit of the safety of the Leaf Village, Yamato indulges Sasuke's request to see Orochimaru, even though Sasuke hadn't bothered with properly communicating with the ninja of Konoha.
When Sasuke failed to communicate with the Sixth Hokage, Yamato lightly reprimands Sasuke for his mistake in failing to update the Hokage. He's mild about it, but he also doesn't tolerate Sasuke's oversight by ignoring the problem, thus showing that Yamato will nip a problem in the bud as soon as he spots it. Very unlike Kakashi, who always waited until a problem was beyond repair and beyond the realm of fixing before haphazardly attempting to fix what could no longer be easily mended.
Instead, Yamato personally rectifies Sasuke's mistakes for him by sending a report to the Hokage himself, although he advises Sasuke to try to do better with coordinating with Konoha in the future. While Yamato lightly reprimands Sasuke, he isn't overly heavy-handed about it. He doesn't even require Sasuke to fix his mistake; Yamato volunteers to fix things this time but advises and asks Sasuke to do better in the future, thus effectively getting the lesson across without being too self-righteous or overbearing.
Yamato also pointedly reminds Sasuke that they are comrades now, and the subtext is clear: Sasuke needs to learn to cooperate and work with people more and not take everything upon himself all the time. Sasuke isn't the only one who wants to help protect Konoha, so Sasuke needs to learn to rely on and trust his comrades. Much like Naruto needed a lecture about figuring out how to control the Ninetails, Sasuke needed the lecture about learning to trust and rely on others and communicating better with the Leaf shinobi just as much.
Once again Yamato cuts through Team 7's communication and secrecy problems by "forcing" the team to communicate with each other. Sasuke is reluctant to communicate with Kakashi, so Yamato immediately puts a stop to that lack of communication and personally fixes Sasuke's failure in communication by sending a report to the Sixth Hokage. Like with the scenario when Sakura didn't tell Naruto that he injured her in his Ninetails rage, Yamato refuses to let to Team 7 continue to lie to each other. Team 7 may be accustomed to not sharing information with each other, but Yamato finds that unacceptable and steps in and fixes the communication problem himself before it can fester and become increasingly problematic.
Furthermore, Yamato gently reminds Sasuke of how a ninja needs to behave when he alludes to the fact that Kakashi must have taught him the importance of trust and teamwork. And through his actions and words both, Yamato is teaching Sasuke teamwork and trust.
Since Orochimaru is prohibited from seeing casual visitors without official authorization, Yamato would be well within his authority to refuse to allow Sasuke to visit Orochimaru until the Sixth Hokage cleared it, particularly since Sasuke and Orochimaru both have previously engaged in criminal activities, and Yamato has been a personal victim of both men, so no one could blame him for barring Sasuke from visiting Oorchimaru until Sasuke got proper clearance (that Sasuke had failed to ask for).
By allowing Sasuke to pass, Yamato expresses the trust and teamwork that he is asking Sasuke for: Yamato chooses to trust Sasuke by cooperating with and helping Sasuke. In return, Yamato is asking that in the future, he wishes for Sasuke to do the same, since they are both working for the benefit and welfare of the Leaf, so there's no reason to hide things from each other.
Overall, Yamato treats all his teammates with respect and dignity. He's not afraid to be blunt and honest with the harsh decisions that ninja sometimes have to make, and he holds them accountable and makes sure there aware of their mistakes, but he allows them room to grow and improve, and he treats them with proper sensitivity and compassion and encouragement whenever they need it. And it's for those reasons that I think Yamato was the perfect sensei for Team 7.
